This is a traditional dish of Odisha. Many people might have seen these flowers or would be having this White-Orchid tree in their backyard. However, did you know that you could prepare an awesome dish out of this flower.

INGREDIENTS:
▪️ 30-40 Kanchan Phula | White Orchid Tree's Flowers▪️ Potato: 1 large or 2 medium sized diced into small pieces about 1 inch
▪️ Badi/Sun-dried Lentil Dumplings: 6-7 medium sized and crushed to very small pieces
▪️ 1 medium sized tomato chopped
▪️ Ambula/Dried Mango: 1 large or 2 small. It can be replaced with amchur powder.
▪️ Kashmiri Red chilli powder- 1 tea spoon
▪️ Turmeric powder
▪️ Salt as per taste
▪️ Panch Phoran
▪️ Curry powder- 1 tea spoon(optional)
For Mustard Paste
▪️ Garlic(10-12 cloves)
▪️ Mustard
▪️ Jeera
The above mentioned spices will be used to make a fine paste.
RECIPE:
1. Remove the petals from the flower and wash it 2-3 times and let it rest for some time to remove excess water.
2. Prepare the masala paste mentioned above and keep it aside.
3. Chop the onions, potatoes and tomatoes and keep it separately.
4. Now in a Wok add 2 tbsp oil and add 1 tea spoon of panch Phoran and add the chopped onions.
5. After frying onions for 1 min add the chopped tomatoes and potatoes and cook it until the potatoes are half cooked.
6. Then add the masala paste, turmeric powder, Kashmiri red chilli powder and salt as per taste.
7. Add Crushed badi/sun-dried Dumplings and Ambula/Dried Mango.
8. Cook for 5-8 mins by stirring in between.
9.Then add the petals and reduce the flame to low.
10. Mix it well with all the masalas and add half cup water.
11. Continue mixing with the help of a spatula.
12. Add half more cup of water and cover it with a lid. Keep the flame in medium.
13. Cook for 8-10 mins. And stir in between.
14. Cook until the petals become soft and mushy and until the water dried out.
15. Now your yummy succulent dish is ready.
